Toll!

Tekiro - Organic Japanese Matcha
Matcha Tekiro is characterized above all by its fresh, slightly grassy and almost sweet fruity taste. A delicate tart note is found here combined with an intense fragrance and jade green foam. Matcha Tekiro is ideal for thin liquid preparation (Usucha). Genuine Japanese Matcha freshly ground in Germany The tea plants from which Matcha is made are traditionally 90% shaded. The plants develop a lot of chlorophyll, theanine and caffeine, but slightly fewer bitter substances. After steaming & drying the tea leaves, the leaf tissue is separated from the leaf veins. The delicate, flake-like leaf tissue particles are called "Tencha" and are later very slowly ground into high-quality Matcha on traditional granite stone mills. In order to preserve the sensitive ingredients in the best possible way, we at KEIKO grind the Matcha on genuine Japanese granite stone mills directly at our location in Diepholz, fresh when required. Did you know that traditional Matcha develops uniquely fine aromas, from mild and nut-like to intensive and grassy thanks to the elaborate production techniques? Storage In order to preserve the precious aromas and ingredients of Matcha in the best possible way, we recommend to seal the Matcha well and store it in a cool and dark place.

Benifuuki Powder - Organic Japanese Tea Powder
The tea variety Benifuuki is characterised by a particularly high content of catechins (EGCG and EGCG3) which are readily available to the body and for this reason it is often drunk in Japan for allergies such as hay fever. For the first time we offer the tea variety Benifuuki not only as leaf tea, but also as a golden green powder, which we can grind very finely and freshly right on our stone mills here on site. One strong or two light portions per day are recommended. Due to its intensive aroma it is very economical in use. Already half the usual dosage results in a finely fragrant, particularly good foaming tea. Aficionados like to drink it pure. For those who find the taste too tart, we recommend a mild dosage, a combination with mild mulberry leaf powder or use as a supplement in drinks and food. Prepared with a little water and lemon and/or apple juice, it is, for example, a sparkling refreshing drink. Storage In order to preserve the precious flavours and ingredients of the powder in the best possible way, we recommend to seal the bag well and store it in a cool and dark place, ideally in your refridgerator or freezer.

Drinking glass, 250ml
Item No. 40203.1 The wavy shape of this glass follows the principle of the golden ratio, making it not only pleasing to the eye, but is said to have a positive effect on the biological valence of its contents after only about 3 minutes in the glass. This is most noticeable in water developing a softer taste. The Glass is quite resilient and well suited for kids, grownups and the use in restaurants. Because of its shape it stands very steadily and if it does get tipped over it will tilt back into standing position by itself go ahead and try it! Each glass is unique. Small variations in measurements, air-bubbles in the glass are part of the handcrafted experience. The glass can be cleaned in the dishwasher, however we recommend washing it by hand for a longer life span. To remove lime residue rinse the inside of the glass with water and citric acid. The outside should not be treated with citric acid.

Matcha Supreme is perfectly suited for the thick preparation as Koicha but is also a pleasure as Usucha. Mantoku - Organic Japanese Matcha
With the Matcha Mantoku we have a true rarity of the tea world in our selection. It is slightly more fired than usual and therefore has a very complex taste with a warm, velvety and nut-like flavor. Intense but almost without bitterness. It is not only suitable for the light Matcha (Usucha), but, due to its mild aroma, also for the thick preparation (Koicha). Cold brewer "ooika"
Item No. 42200 The Ooika- Cold brewer for the preparation of drip tea can be used with hot OR cold water. However, it is ideal especially for cold brew green tea highlighting the rich yet sweet green fragrance of high quality Kabusecha, known amongst tea-connoisseurs as Ooika. The Cold brewer consists of two glass vessels which are connected with a rubber base with a small opening, which lets the water drip into the stainless steel strainer underneath and then into the lower vessel. To prepare your cold drip Green Tea measure 2-3 teaspoons of tea into the sieve (make sure the tea covers the bottom of the strainer evenly) and fill the upper vessel with 600 to 900ml of water. You can also use ice cubes to make a Kouridashi-brew, either letting them melt slowly to drip over the tea or just add them to your tea once its ready. The preparation takes between 25 and 45 minutes. You can adjust the speed by pushing the little knob deeper into the rubber base to slow the water flow or pulling it back out to speed it up. Best suited for this type of preparation is deep steamed (fukamushi) Kabusecha from an early picking, as these will best release the aroma and all the valuable ingredients of the tea but also the least astringency. Our Tip: Serve the cold drip tea in wine-glasses to surprise your dinner guests with a tasty refreshing alternative to alcohol!

Matcha whisk, light, size 80
Item No. 40115.1 The classic among the Matcha whisks (Chasen) in size 80. The handcrafted bamboo Matcha whisks are essential for creating the fine foam-top on your Matcha and making sure the powder dissolves without leaving lumps or a grainy texture. The finer the prongs of the whisk (indicated by a larger size) the better the results. For the easy preparation at home we recommend to first add only a small amount of water to the Matcha Powder and use the whisk to blend it to a smooth paste. Then add the rest of the water and whisk it up painting an M with the whisk with quick movements from the wrist. Matcha whisks are made from bamboo-sticks that are cut into fine prongs at the top and then bent into shape. The thicker the bamboo and the higher/sturdier the quality, the more prongs can be made, which is reflected in the different sizes (i.e. 80, 100, 120). Although the numbers traditionally refer to the amount of prongs, the width of the bamboo and the fineness of the prongs are actually more relevant to the size indications. You will notice that especially Usucha is easier to whisk up with a larger whisk. When a smaller Matcha bowl is used however, a slender whisk is more suitable.
