The tea cultivar Benifuuki is characterised by a particularly high content of catechins (EGCG and EGCG3) which are readily available to the body and for this reason it is often drunk in Japan for allergies such as hay fever.

Preparation

Benifuuki Powder can be whisked up with water using a Chasen, just like Matcha.

The catechins give this golden green powder a strong and astringent aroma, which makes it very economical in use. Already half the usual (Matcha-)dosage results in a finely fragrant tea. 

Aficionados like to drink it pure. For those who find the taste too tart, we recommend a mild dosage, a combination with mild mulberry leaf powder or the use as a supplement in drinks and food. Prepared with a little water and lemon and/or apple juice, it is, for example, a wonderfully refreshing drink.

Storage

In order to preserve the precious flavours and ingredients of the powder in the best possible way, we recommend to seal the bag well and store it in a cool and dark place, ideally in your refridgerator or freezer.

Matcha preparation

Prepare

Sift approx. 1–2 g of matcha (½–1 bamboo scoop) through a fine sieve into a dry matcha bowl to avoid lumps.
Whisk

Whisk

Pour about 70–80 ml of water at 70–80 °C over it and whisk the matcha into a froth with a bamboo whisk (chasen) in brisk W-shaped movements.

Enjoy the matcha immediately while it is creamy and frothy. For a matcha latte, top up with warm milk.

Ich hattest das Benifuuki Pulver gekauft, für mich schmeckt es gar nicht bitter. Ich nehme es gegen meine Pollenallergie. Auf jeden Fall gibt es langanhaltene Energie . Im nächsten Jahr fange ich früher damit an, Ich glaube es unterstützt gut gegen die Pollenallergie. Mit ein bisschen Apfel- oder Orange Saft aufgeschlagen und mit kaltem Wasser aufgefüllt, so schmeckt er mir am Besten .

Mulberry Leaf Powder - Organic
The mild and sweet aroma of mulberry leaves has a relaxing and soothing effect. The color, especially in powder form, is similar to matcha tea with its fresh light green hue. In terms of taste, the powder is reminiscent of a mild matcha with the slightly nutty note of nettle tea. It is not for nothing that the powder of ground mulberry leaves is popularly used in Japan for caffeine-free "matcha lattes". This may be attributed to the fact that the mulberry leaves are steamed and processed just as gently as Japanese green tea, which also preserves the sensitive ingredients in the best possible way. Whipped up like matcha or matcha latte, it is an ideal caffeine-free and milder alternative or can be used as a complement to matcha for the evening. Mulberry leaves do particularly well as a balancing component in more tart teas such as Benifuuki powder - here the sweet aroma creates a pleasant balance. Matcha whisk, light, size 80
The classic among the Matcha whisks (Chasen) in size 80.  The handcrafted bamboo Matcha whisks are essential for creating the fine foam-top on your Matcha and making sure the powder dissolves without leaving lumps or a grainy texture. The finer the prongs of the whisk (indicated by a larger size) the better the results. For the easy preparation at home we recommend to first add only a small amount of water to the Matcha Powder and use the whisk to blend it to a smooth paste. Then add the rest of the water and whisk it up painting an M with the whisk with quick movements from the wrist.  Matcha whisks are made from bamboo-sticks that are cut into fine prongs at the top and then bent into shape. The thicker/sturdier the bamboo and the higher the quality, the more prongs can be made, which is reflected in the different sizes (i.e. 80, 100, 120). Although the numbers traditionally refer to the amount of prongs, the width of the bamboo and the fineness of the prongs are actually more relevant to the size indications. You will notice that especially Usucha is easier to whisk up with a larger whisk. When a smaller Matcha bowl is used however, a slender whisk is more suitable.TIP: Use a Matcha whisk stand to keep your whisk in shape longer!

Item No. 40226.1 Matcha measuring spoon (Chashaku) made of bamboo. Use 1-2 heaped spoons of Matcha (per 100ml) for one bowl of Usucha. The exact amount can vary depending on the type of Matcha and your personal taste, but you will quickly find the right amount of Matcha for your taste after a few tries. Start with a higher dosage and if it is too strong add some extra water and use less powder the next time. Make sure the spoon does not get wet, since the water will roughen the surface making the powder stick to it. Clean with a dry cloth instead.

Unlike regular Green Tea this Japanese green tea specialty from the 1st picking in May is slightly fermented. It comes from the tea variety "Benifuuki" and has a very high content of the antioxidative or antiallergic catechines EGCg and 3MeEGCg (EGCg3). The scent and flavor of this years harvest, when all conditions are just right during the time of the Benifuuki Spring picking surprised even us. We are delighted by this new harvest: As soon as you open the package a wonderful smell streams out, characteristic for Benifuuki and a little like that of very fine Oolong tea. The leaf structure is good and of a luscious green. In the cup the tea develops a soft green color with golden reflexions and caresses the tongue with playfully fruity and light with a subtle tartness and the elegant notes of jasmine in the scent.  Storage In order to preserve the precious flavours and ingredients of the tea as best as possible, we recommend to seal the bag well and store it cool and dark - ideally in your refrigerator or freezer.  The production and also the fragrance are similar to that of Oolong tea. However, the freshly harvested leaves are not simply heated, but steamed briefly at especially high temperatures. Furthermore, the partial fermentation does not take place in a warm environment as with Oolong, but in the dark at a low temperature. Only the further drying and pressing process corresponds to that of Oolong tea. Thanks to this special processing this unusual tea stays green like a real Japanese tea!

This Japanese green tea from the autumn picking is very tenderly fermented. It is made from the tea variety "Benifuuki". It is characterised by a high content of the special active ingredient epigallocatechin gallate (EGCG 3). The caffeine content of the autumn picking is comparatively low so that the tea is also suitable for the afternoon. The yellowish, clear cup has a milder aroma than the first two pickings with a gentle citrus note. Furthermore, the partial fermentation does not take place in a warm environment as with Oolong, but in the dark at a low temperature!
