Benifuuki - the catechine tea

This Japanese green tea is gently fermented. It comes from the newly discovered tea bush Benifuuki and has an extremely high content of the special active ingredient epigallocatechin gallate (EGCG 3). The light green, clear, extremely flowery cup has an unmistakable exquisite bitter note.

The production and also the scent are far similar to those of oolong tea. However, the freshly harvested leaves are not simply heated, but steamed over hot (irimushi). Moreover, the partial fermentation does not take place in warm light as with oolong, but in the dark at a low temperature! Only the further drying and fulling process corresponds to that of oolong tea. Thanks to this gentle processing, this unusual tea stays green like a real Japa tea!

You can find more information about the ingredients and the effects of Benifuuki in our green tea blog.
