KEIKO Matcha Chews have a small special feature: The individual sweets are wrapped in a delicate starch paper. THE INNER STARCH PAPER CAN BE EATEN WITH THE CANDY: NO NEED TO UNWRAP IT! It protects against sticking to the outer paper and dissolves in the mouth after a few seconds.

Sae Tezumi is made from the award winning cultivar Sae Midori using only the best leaves carefully selected and picked by hand. The result is a wonderfully clear, lively tea with a fresh sweetness, a light green cup and a slight aroma of fresh pine needles in spring. The harvest by hand also entails a smaller harvest amount - so get your share now, stocks are limited! Kabusecha is a green tea for which the tea plants are shaded, thus forming a high content of chlorophyll and other active ingredients and at the same time little bitter substances. Their characteristic "shade aroma" is called "ooika". <h3>Preparation</h3> For the hot infusion of Sae Tezumi , we recommend an infusion temperature of 65°C and a brewing time of 70 seconds for the first infusion. For the second infusion, a shorter infusion time of about 30 seconds is sufficient, you can then let the last infusion steep a little longer again (70 sec) to bring out the full flavor. The Sae Tezumi is a normal steamed tea (Chumushi) and also suitable for cold infusions (Mizudashi). Infusing this tea with cold water will take a little longer than for Fukamushi tea but creates a slightly sweet, light taste and a light green colour. Simply steep the tea leaves for about 7-10 minutes. Since the bitter substances do not dissolve as strongly in cold water, the sweet aromas of the Kabusecha are especially noticeable. It is now 25 years since the first tea under the KEIKO brand went on sale. To celebrate this milestone, we have created a very special tea that reflects the distinctive features of KEIKO teas and yet remains something very special. KEIKO *Goldrush* is a symphony of different components - an intensely steamed Kabusecha from the very first early harvest, a fine Matcha powder and a touch of real gold dust. You all know the typical grassy and green aroma of KEIKO teas, but did you know that Shimodozono in Kagoshima has made a name for itself primarily with so-called "Tsuyobi" tea? This stronger-fired green tea enjoys great popularity there, but has so far only been represented in this country in a lighter form in Kabuse Dan. We have combined the speciality of intensively fired tea with tea dried in the classical way. The result, as always in close cooperation with our partner in Japan, is a full-bodied, velvety taste with the delicate sweetness of the leaf tips picked early in April. As the icing on the cake, we have added fine matcha powder and a touch of real gold dust to the result of this special composition, which brings out the bright green cup colour even more with its reflections and make the first two infusions in particular a feast for the senses! The KEIKO Anniversary Tea is a special edition and therefore only available while stocks last. <h3>Cultivation and processing</h3> <b>Kabusecha</b> is a Japanese green tea, for the production of which the tea plants ripen under special nets in partial shade, whereby it develops a higher content of chlorophyll, theanine and other active substances. Its characteristic, fresh-green "shade aroma" is called "ooika". Like many KEIKO teas, this tea is a <b>Fukamushi-cha</b>. Due to this optimised form of steaming, the leaf pores open wider and the extracts pass more easily and quickly from the tea leaf into the water. This is recognisable by the deep green colour of the tea in the cup and the yield of the tea - top qualities are therefore particularly productive with up to 4 infusions. <b>Tsuyo-bi</b> is the name given to the intensive firing of the teas, which has become the trademark of Shimodozono teas on the Japanese market. The drying of the teas is intensified to achieve a particularly full-bodied and warm aroma. <b>By the way:</b> the design is also a small homage to our partners and is based on the design of the most popular Shimodozono teas in Japan. The calligraphy on it stands for "KEIKO" (large, in the middle) and "Shimodozono" (smaller, top right). <h3>Preparation</h3> We recommend an infusion temperature of 60-65°C. Infuse the first infusion for about 50 seconds. For the subsequent infusions, a few seconds are enough to draw out the aroma of the leaves. For the last infusion, you can increase the infusion time slightly to dissolve as much of the remaining extracts as possible. Due to the matcha content, the first infusion in particular is very intense. If you find this too strong, you can slightly adjust the flavour intensity by adding a little more water. Intensely steamed early picks are particularly well suited for a cold infusion (Mizudashi). Even with cold water, the "Gold Rush" develops a particularly silky texture and a refreshing clarity after just a few minutes of infusion. The sweet theanine notes also come out particularly well this way, as the bitter substances do not dissolve as strongly in cold water. <h3>Storage</h3> To best preserve the valuable flavours and ingredients of the tea, please seal the bag tightly and store in a cool, dark place in the fridge or freezer. <h3>A small side note</h3> Unfortunately, real gold powder is not provided for as an ingredient in the organic regulations, so products with gold cannot be labelled with the organic seal. Therefore, our jubilee tea unfortunately cannot carry the organic seal due to its goldiness, even though the tea leaves and matcha powder come 100% from our organic tea gardens. Nevertheless, we decided to go for the gold, after all, we don't have an anniversary every year!

For this green tea, the tea plants are shaded with special nets before harvesting. The nets allow only about half of the light to pass through, which means that the plants produce a high content of chlorophyll and other active substances and at the same time few bitter substances. Their characteristic "shade aroma" is called "ooika".<h3>Fukamushicha</h3>The teas in this set have all been intensively steamed (fukamushi-cha, 100 - 120 seconds steaming time). The gentle steaming opens the leaf pores and the extracts pass from the tea leaf more easily and quickly into the water. This can be recognised by the deep green colour of the tea in the cup and the yield of the tea - with top qualities like these, 4 infusions are possible!<h3>Preparation</h3>We recommend an infusion temperature of 60-65°C for these teas. Let the first infusion steep for about 1 minute, for later infusions just steep briefly and pour out after a few seconds. For the last infusion, the infusion time can be extended a little more to get all the goodness out of the tea. Intensely steamed early pluckings are also particularly suitable for cold infusions (Mizudashi). Even with cold water, you get an intense and refreshing tea after just a few minutes. Since the bitter substances do not dissolve as strongly in cold water, the sweetish aromas of Kabusecha come into their own. For a cold-brew steep the tea leaves in cold water for at least 5 Minutes.Incidentally, the early pluckings also have a particularly high theanine content, which is noticeable in the sweet taste and comes out best at a low infusion temperature!<h3>Storage</h3>In order to preserve the valuable aromas and ingredients of the tea in the best possible way, we ask you to close the bag tightly and store it in a cool, dark place in the fridge or freezer.

Measurements: Matcha whisk 8,5cm Matcha measuring spoon (unfolded) 13cm The handcrafted bamboo Matcha whisks are essential for creating the fine foam-top on your Matcha and making sure the powder dissolves without leaving lumps or a grainy texture. The finer the prongs of the whisk (indicated by a larger size) the better the results. For the easy preparation at home we recommend to first add only a small amount of water to the Matcha Powder and use the whisk to blend it to a smooth paste. Then add the rest of the water and whisk it up painting an M with the whisk with quick movements from the wrist. Matcha whisks are made from bamboo-sticks that are cut into fine prongs at the top and then bent into shape. The thicker the bamboo and the higher/sturdier the quality, the more prongs can be made, which is reflected in the different sizes (i.e. 80, 100, 120). Although the numbers traditionally refer to the amount of prongs, the width of the bamboo and the fineness of the prongs are actually more relevant to the size indications. You will notice that especially Usucha is easier to whisk up with a larger whisk. When a smaller Matcha bowl is used however, a slender whisk like this one is more suitable. Tip: Soak the Matcha whisk in water before using it, to soften the bamboo and avoid breakage.

Handgefertigte, Raku-Yaki Matchaschale (Chawan) mit einer spannenden Glasur, mit einer rauchigen grauen Färbung die an einigen Stellen das klassische Raku-Rot andeutet. Die Glasur hat ein paar kleine Aussparungen bei denen der Ton darunter zum Vorschein kommt.Am Fuß der Schale befindet sicheine Prägung mit dem Zeichen für "Raku". Die Schale ist etwa 8cm hoch, hat einen Durchmesser von 11,5cm und wiegt 336g. Befüllt werden Matchaschalen eigentlich nie ganz, sondern nur zu etwa 1/3 mit ca. 100ml pro Portion. Pflegehinweis Spülen Sie die Schalen vor und nach dem Gebrauch mit heißem Wasser und lassen Sie sie anschließend gut trocknen bevor sie in Holzbox, Karton oder Regal verstaut werden. So wird insbesondere bei Schalen mit rissiger oder poröser Oberfläche vermieden, dass der Tee sich im Ton anreichert, was mit der Zeit zu unbedenklichen aber unangenehmen Gerüchen führen kann. Beim Erstbebrauch kann bei manchen Schalen durch den Brand ein muffiger Geruch entstehen. Durch (eventuell wiederholtes) Befüllen und Ausspülen mit einem kräftigen heißen Tee wie Hojicha oder Bancha verfliegt dieser.
