An exciting rarity from Kagoshima. The name "Niji" ("rainbow") symbolizes the wide range of delicate aromas this Tencha has to offer. Due to the strong shading of the tea bushes before harvesting, particularly high amounts of chlorophyll, theanine and caffeine are formed in the plant. The rather bitter tannin content, however, remains low. Tencha is the preliminary stage of Matcha tea. After short steaming and drying, the leaf tissue is separated from the leaf veins in an air stream. These flake-like Tencha leaves produce an exquisite, aromatic-mild and multi-faceted infusion. Can also be used as a decorative sprinkle seasoning in fine, experimental cuisine. An ideal culmination of exquisite dishes and a taste experience of a special kind.

Storage

In order to preserve the precious flavours and ingredients of the tea as best as possible, we recommend to seal the bag well and store it cool and dark - ideally in your refrigerator or freezer.

Prepare a cup for each person that has a capacity of 80 to 100 ml. Allow the boiled water to cool to 80° to 60°C, depending on the type. To do this, either put the water in a cooling bowl or pour it directly into the cups to cool, which will also preheat them.

Put a level teaspoon of tea per person into a clay pot. Pour one cup of water per person over the leaves. Allow the first infusion to brew for a maximum of 30 to 60 seconds.

If the tea is to be served to several people, first pour a little tea into each cup and then fill the cups in reverse order. This way, the tea will be the same strength in all cups. The pouring movements gradually give the tea the right green color. Pour out the last "golden" drops and prevent the tea from brewing any further.

Serve the tea fresh. In Japan, a small sweet treat is often served with unsweetened tea. For further infusions, pour water over the tea leaves again. Only allow to steep for about 15 seconds, as the leaf has already swollen and the ingredients are released more quickly. Distribute quickly all around.

Gyokuro Kiwami - Organic Japanese Green Tea
Enjoy a harmonious aroma with the fine sweetness typical of Gyokuro, paired with a refreshing fruity spice and a long, full-bodied aftertaste. For the first time we can now offer a premium Gyokuro from the highlands of Kagoshima. The tea bushes are only harvested once a year. In two stages, the tea plants are shaded for a total of 3 weeks and slightly steamed for about 40 seconds (Futsuumushi). The infusion of the small dark green needle-shaped leaves presents itself in the cup with a green that is unusually intense for Gyokuro, especially in the second infusion, and a fresh, invigorating fragrance. We recommend three infusions at 50-60°C for this tea, the fruity aromas are particularly effective in cold infusion. Fully shaded teas from organic cultivation are particularly rare, as the tea plants are also particularly prone to parasites in the strong shade and special diligence and experience are required for cultivation. Mantoku - Organic Japanese Matcha
With the Matcha Mantoku we have a true rarity of the tea world in our selection. It is slightly more fired than usual and therefore has a very complex taste with a warm, velvety and nut-like flavor.
