Shincha Sae Midori 2024 - Organic Japanese Green Tea
New in the KEIKO Shincha family: a sweet and aromatic Asamushi tea made from 100% Sae Midori with a silky-smooth sweetness, a full-bodied flavour with a long finish that is somewhat reminiscent of Gyokuro. Cultivation and processing Shincha - the ‘new tea’ heralds the start of the tea year every spring. The first tea from the fine, particularly aromatic leaf tips, which are harvested in the subtropical climate of Kagoshima as early as mid-April. Kabusecha is a green tea that is produced by shading the tea plants for 7-10 days before harvesting, which results in a high content of chlorophyll and other active ingredients and a low level of bitter substances. Their characteristic ‘shade flavour’ is called ‘ooika’. Early harvests such as Shincha Sae Midori also have a particularly high theanine content, which is noticeable in the sweet flavour and is particularly evident in the Sae Midori cultivar. Shincha Sae Midori is an asamushi tea, i.e. only lightly steamed. The leaves are therefore dark green, shiny and needle-shaped. The infusion is light green in the cup Preparation Due to the lower steaming, the tea extract dissolves somewhat more slowly than with intensively steamed teas - we recommend an infusion temperature of around 65°C and an infusion time of 70 seconds for the first infusion. For the second infusion, a brewing time of around 30 seconds is sufficient, after which it can be extended again. This tea also develops its wonderfully full flavour as a cold infusion after a slightly longer infusion time - the dosage can be increased depending on taste. Cultivar: 100% Sae Midori (Asamushi) from Yamaguchi-San in Satsuma-cho Storage To preserve the tea's valuable flavours and ingredients as much as possible, please close the bag tightly and store it in a cool, dark place in the fridge or freezer.

Sae Gyokuro 2023 - Organic Japanese Green Tea
The organic cultivation of fully shaded Gyokuro is an art that finds its perfection in this exclusive tea. Enjoy the velvety texture and a pristine aroma with the innocent fruity sweetness reminiscent of young sugar peas, which results from an especially high theanine content. From the prized cultivar Sae Midori our farmers have created a real treasure: the Sae Gyokuro. With a velvety texture, a pristine aroma and an innocent sweetness reminiscent of young sugar peas. A tea that invites you to dream. As a seasonal tea, Sae Gyokuro is only harvested once a year and available only while stocks last. In two stages, the tea plants are shaded for a total of 3 weeks and slightly steamed (chumushi). We recommend three infusions at 50-60°C for this tea, the fruity aromas are particularly effective in cold infusion. Fully shaded teas from organic cultivation are particularly rare, as the tea plants are also particularly prone to parasites in the strong shade and special diligence and experience are required for cultivation. However, the effort is rewarded with a very special, multifaceted density of aromas. In order to preserve the precious flavours and ingredients of the tea as best as possible, we recommend to seal the bag well and store it cool and dark in the refrigerator or freezer.

Ginger-Lemon-Bancha - Organic Japanese Green Tea
This large-leafed Bancha is fresh-fruity and spicy-aromatic in taste. Also, thanks to the low caffeine content of the autumn harvest, it is ideal for the whole family. Bancha is produced from the pruning after the main harvest, using mainly the larger leaves. For the Aki-Bancha used here, the unshaded leaves from the autumn harvest are used. Like simple Bancha, the ginger-lemon Bancha is often drunk with meals. Due to the strong aroma of lemon verbena and ginger, it is especially suitable for more hearty dishes. In summer, the tea also tastes very refreshing when cold. To enjoy as iced tea pour the tea hot and let it cool down. Storage In order to preserve the precious flavours and ingredients of the tea as best as possible, we recommend to seal the bag well and store it cool and dark.

Hojicha - Organic Japanese Green Tea
Hojicha (or: Houjicha) is a roasted green tea. The name is composed of the word 'hojiru' for 'toast' and the 'cha' for 'tea'. With a Horoku tea roaster you can even roast your own hojicha from your favourite green tea. KEIKO Hojicha is made from Kabusecha of the 1st and 2nd picking. Hojicha is probably the only green tea that has the right to have a red-brown cup colour. What otherwise indicates a lack of quality is in this case desired. Hochija is a great companion in both the cold and warm seasons. With its warm, mild and nut-like roasting aromas, a hot Hojicha is just right to warm up after a long winter walk. In Japan, Hojicha is often drunk with the whole family at dinner. But it is also great in the summer as a cold refreshment when you are out and about, doing sports or just to accompany your meals. Storage In order to preserve the precious flavours and ingredients of the tea as best as possible, we recommend to seal the bag well and store it cool and dark - ideally in your refrigerator or freezer.

In addition, Kukicha contains less caffeine than other green teas, so that it can also be enjoyed in the evening.Kabusecha Kabusecha is a green tea for which the tea plants are shaded, thus forming a high content of chlorophyll and other active ingredients and at the same time little bitter substances.
