KEIKO Kukicha is made from the fine stems (Japanese: Kuki) of the tea leaves from the first 3 main pickings. Especially for green tea beginners this tea is a wonderful entry, because even with longer infusion time and hotter water it hardly develops bitter substances and maintains its pleasant mild, warm aroma. In addition, Kukicha contains less caffeine than other green teas, so that it can also be enjoyed in the evening.

Kabusecha

Kabusecha is a green tea for which the tea plants are shaded, thus forming a high content of chlorophyll and other active ingredients and at the same time little bitter substances. Their characteristic "shade aroma" is called "ooika".

Storage

In order to preserve the precious flavours and ingredients of the tea as best as possible, we recommend to seal the bag well and store it cool and dark - ideally in your refrigerator or freezer.

Green tea preparation instructions

Grüntee Zubereitung

Preparation

Prepare a cup for each person that has a capacity of 80 to 100 ml. Allow the boiled water to cool to 80° to 60°C, depending on the type. To do this, either put the water in a cooling bowl or pour it directly into the cups to cool, which will also preheat them.

Grüntee Zubereitung

Dosage

Put a level teaspoon of tea per person into a clay pot. Pour one cup of water per person over the leaves. Allow the first infusion to brew for a maximum of 30 to 60 seconds.

Grüntee Zubereitung

Pouring

If the tea is to be served to several people, first pour a little tea into each cup and then fill the cups in reverse order. This way, the tea will be the same strength in all cups. The pouring movements gradually give the tea the right green color. Pour out the last "golden" drops and prevent the tea from brewing any further.

Grüntee Zubereitung

Enjoy

Serve the tea fresh. In Japan, a small sweet treat is often served with unsweetened tea. For further infusions, pour water over the tea leaves again. Only allow to steep for about 15 seconds, as the leaf has already swollen and the ingredients are released more quickly. Distribute quickly all around.

L-Theanin-reicher Tee

Kyusu-teapot "Shiko" small, Banko-Yaki, 350 ml
Item No. 40701.1 This Banko Yaki kyusu combines the centuries-old tradition of kyusu making in Yokkaichi with modern demands on design and handling. Japanese kyusu side handle teapots are ideal for brewing green tea. The tea leaves can unfold freely in the pot and are retained by an integrated strainer in front of the spout during brewing. The leaves remain in the pot and are then simply brewed again briefly with water for further infusions. Special features. At Fujiso Manufactory, the holes in the clay strainer in front of the beak-like spout are poked by hand. This skill is still mastered by only a few masters in Japan - there are only 3 artists left who make such sieves in Japan. Clay screens of this type are particularly well suited for slightly larger leaf material. These include medium-strong or only lightly steamed teas such as Gyokuro, Shincha Yakushima, Hojicha, Oolong and other specialties. In the case of intensely steamed tea (fukamushi cha), the fine leaves may get stuck in the holes. The belly shape of the pot gives the tea room to unfold and the handle and spout are shaped so that the pot fits comfortably in the hand and the tea can be poured without dripping. The notches on the lid ensure a smooth flow when pouring by improving air exchange. On the outside, the reddish-brown clay typical of the Banko-Yaki style is unglazed, while a light, pale green glaze has been applied to the inside. This glaze was specially developed to facilitate cleaning and to allow the aroma of the prepared teas to develop without external influences and not to settle in the porous clay. Thus, the pot can be used for changing teas with intense aroma, without it lingering on the next tea.By the way, for the Tokyo Olympics, this Kyusu was exclusively selected as the official guest gift for the delegates!Filling capacity350ml, for 1-4 personsThe filling quantity of the pot should be chosen so that the tea can be completely distributed to the ready cup(s) and no water remains in the pot between infusions. The filling quantities are measured to the rim - the actual amount in daily use is slightly smaller.Deviations.Please note that the shape, color and size of tea ceramics may vary slightly! This is especially true for teapots, which are all at least partially handmade.CleaningTo clean the teapot after everyday use, simply tap the teapot against your palm to loosen the tea and shake it out. Rinse well with clear water, also through the strainer. If the strainer has become clogged after longer use, you will find instructions here on how to care for and clean your teapot - for undiminished tea enjoyment: Cleaning instructions

Kabuse No. 1 - Organic Japanese Green Tea
Half shaded teas from the first picking like the Kabuse No. 1 have an aromatic touch of sweetness due to an increased theanine content, paired with a fine bitterness and fresh green. For this shaded Sencha from the first main picking, the first leaves sprouting from the tea bush are harvested. Kabusecha Kabusecha is a green tea for which the tea plants are shaded, thus forming a high content of chlorophyll and other active ingredients and at the same time little bitter substances. Their characteristic "shade aroma" is called "ooika". Fukamushicha Like many KEIKO teas, this is an intensively steamed tea (Fukamushi-cha, 100 - 120 seconds steaming time). Due to the gentle steaming process, the leaf pores open and the extracts from the tea leaf reach the water more easily and quickly. This can be recognized by the deep green tea colour in the cup and the yield of the tea - with top qualities up to 4 infusions are possible! Cold Brew Intensively steamed early pickings are also particularly suitable for cold infusions (Mizudashi or Cold Brew). By infusing the leaves with cold water you will get an intensive and refreshing tea after only a few minutes. Since the bitter substances do not dissolve as strongly in cold water, the sweet aromas of the Kabusecha are especially noticeable. Storage In order to preserve the precious flavours and ingredients of the tea as best as possible, we recommend to seal the bag well and store it cool and dark - ideally in your refrigerator or freezer.

Sencha - Organic Japanese Green Tea
For this Sencha, the small leaves that grow back after the first two harvests are used. For the third picking in July, the plants are no longer shaded, which results in a slightly higher tannin content, producing a pleasant, finely tart aroma. A refreshing, agreeable tea with a light green cup colour. We recommend two to three infusions for tea of the third picking. Storage In order to preserve the precious flavours and ingredients of the tea as best as possible, we recommend to seal the bag well and store it cool and dark - ideally in your refrigerator or freezer.

Bancha - Organic Japanese Green Tea
Kabuse Bancha is a green tea speciality made from the pruning of the tea plants after the main harvest, usually after the last harvest in summer or autumn. However, KEIKO Bancha is harvested in spring and processed as carefully as only Sencha or Kabusecha is usually processed. In spring, the leaves contain particularly high levels of theanine, which gives this unusual Bancha a particularly mild, harmonious aroma. It is light green in the cup and an ideal family and beginners green tea. In Japan Bancha is often served in restaurants.
