A green tea powder from the 1st picking in May. Very aromatic with a delicate astringency. Recommended for light matcha (usucha) and ideal for mixed drinks and green tea cocktails. 
Unlike matcha, kabuse powder is not made from tencha, but from the whole tea leaf. The tea plants for kabuse powder are shaded by 50% instead of 90% and thus grow in partial shade. By grinding the whole leaf, kabuse powder contains more tannins than matcha and has a stronger flavour. 
Its strong green colour and stronger aroma bring out the full flavour of green tea. Whether in cocktails, ice cream or milkshakes, kabuse powder is an all-rounder. 
To preserve the valuable flavours and ingredients of the powder in the best possible way, please close the bag tightly and store it in a cool, dark place.

Prepare

Place the matcha whisk briefly in warm water to increase the elasticity of the bamboo and avoid broken ribs. Pour the matcha powder through a fine kitchen sieve.

Dosing

Put one to two spatula tips or a small, level teaspoon (approx. 1 to 1.5 g) of matcha into the pre-warmed, empty matcha bowl.

Tip: If you prefer not to sift, you can first mix a small sip of cold water with the powder to form a thick paste.

Frothing

Fill with 70-100ml of water at around 80° and use a matcha whisk to whisk the tea with quick hand movements (as if to draw an "M" in the cup) for around 20 seconds until a fine foam forms on the surface.

Item No. 40115.1 The classic among the Matcha whisks (Chasen) in size 80. The handcrafted bamboo Matcha whisks are essential for creating the fine foam-top on your Matcha and making sure the powder dissolves without leaving lumps or a grainy texture. The finer the prongs of the whisk (indicated by a larger size) the better the results. For the easy preparation at home we recommend to first add only a small amount of water to the Matcha Powder and use the whisk to blend it to a smooth paste. Then add the rest of the water and whisk it up painting an M with the whisk with quick movements from the wrist. Matcha whisks are made from bamboo-sticks that are cut into fine prongs at the top and then bent into shape. The thicker the bamboo and the higher/sturdier the quality, the more prongs can be made, which is reflected in the different sizes (i.e. 80, 100, 120). Although the numbers traditionally refer to the amount of prongs, the width of the bamboo and the fineness of the prongs are actually more relevant to the size indications. You will notice that especially Usucha is easier to whisk up with a larger whisk. When a smaller Matcha bowl is used however, a slender whisk is more suitable.

Mino-yaki matcha bowl (chawan) from Gifu Prefecture.The blue-green color gradients on the outside of the bowl are reminiscent of the sea, especially also, due to the glaze that is glossy on top and matte on the bottom.
