Matcha-Eis

Es gibt verschiedene Möglichkeiten leckeres Matcha-Eis zu zaubern. Dafür sind vor allem farbintensive Sorten wie Kabuse Pulver Soshun oder Kabuse Pulver No.1 zu empfehlen. Besonders süßes Eis kann durch frische Herbe von Kabuse Pulver No.2 ausbalanciert werden. Für weitere Geschmacksnuancen eignen sich auch Matcha Charming Chai und Matcha Roasty Rebel.

Die wohl einfachste Variante ist Matchapulver in ein gekauftes, angetautes Eis einzumischen. Dafür eignet sich helles, möglichst neutrales Eis wie z.B. Soja-, Vanille oder Zitroneneis.

Ebenfalls erstaunlich einfach und sehr lecker ist Banana (N)ice Cream:

Dazu geschälte Bananen tiefkühlen und dann mit einer Küchenmaschine oder einem guten Pürierstab zu Eiscreme verarbeiten. Optional etwas Kokosmilch für noch mehr Cremigkeit hinzufügen und nach Belieben mit Matchapulver verfeinern. Ggf. noch einmal kurz ins Gefrierfach stellen um das Eis wieder zu Festigen. Besonders lecker schmeckt uns diese Variante mit ein paar (salzigen) Nüssen wie Cashews oder Erdnüssen.

Für Eis am Stiel die Bananen schon vor dem Einfrieren zerdrücken oder pürieren und mit Matchapulver vermengen. Die Förmchen damit befüllen und einfrieren. Für die Kombi mit weiteren Geschmacksrichtungen eignen sich zum Beispiel frische Beeren (oder Marmelade), Zimt oder Kakao.

Hier noch ein Rezept für selbstgemachte Eiscreme:

Grüntee-Eisparfait

2 gehäufte TL Grünteepulver (Matcha)

5-6 TL Wasser

2 Eigelb

60 g Zucker

200 ml Schlagsahne

Wasser kochen und auf ca. 80°C abkühlen lassen. Zwei gut gehäufte Teelöffel Matcha in eine Schüssel geben und mit dem heißen Wasser verrühren und abkühlen lassen. Eigelb und Zucker dazugeben und schaumig schlagen. Sahne steif schlagen und vorsichtig unter die Grüntee-Eigelbmasse heben.

In eine flache Schale geben und für zwei bis drei Stunden in die Gefriertruhe stellen.
