Benifuuki No. 1 - Organic Japanese Green Tea

Benifuuki No. 1 - Organic Japanese Green Tea

Dosage 1 tsp (level to heaped)

Water temperature 70-80°

Infusions 3

Brewing time 60-150 sec

Unlike regular Green Tea this Japanese green tea specialty from the 1st picking in May is slightly fermented. It comes from the tea variety "Benifuuki" and has a very high content of the antioxidative or antiallergic catechines EGCg and 3MeEGCg (EGCg3).

The scent and flavor of this years harvest, when all conditions are just right during the time of the Benifuuki Spring picking surprised even us.

We are delighted by this new harvest: As soon as you open the package a wonderful smell streams out, characteristic for Benifuuki and a little like that of very fine Oolong tea. The leaf structure is good and of a luscious green. In the cup the tea develops a soft green color with golden reflexions and caresses the tongue with playfully fruity and light with a subtle tartness and the elegant notes of jasmine in the scent.

Storage

In order to preserve the precious flavours and ingredients of the tea as best as possible, we recommend to seal the bag well and store it cool and dark - ideally in your refrigerator or freezer.

The production and also the fragrance are similar to that of Oolong tea. However, the freshly harvested leaves are not simply heated, but steamed briefly at especially high temperatures. Furthermore, the partial fermentation does not take place in a warm environment as with Oolong, but in the dark at a low temperature. Only the further drying and pressing process corresponds to that of Oolong tea. Thanks to this special processing this unusual tea stays green like a real Japanese tea!

Green tea preparation

Prepare

Prepare

Provide one cup with a capacity of 80 to 100 ml per person. Depending on the variety, let the boiled water cool down to 80° to 60°C. To do so, pour the water into a cooling bowl or directly into the cups to cool, which also pre-warms them.
Dose

Dose

Add one level teaspoon of tea per person into a clay teapot. Pour one cup of water per person over the leaves. Let the first infusion steep for a maximum of 30 to 60 seconds.
Pour

Pour

If the tea is served to several people, first pour only a little tea into each cup and then top them up in reverse order. This way the tea is equally strong in all cups. The pouring motion gradually gives the tea its proper green colour. Also pour out the last “golden” drops to prevent the tea from over-steeping.
Enjoy

Enjoy

Serve the tea fresh. In Japan, a small sweet is often served with the unsweetened tea. For further infusions, pour water over the tea leaves again. Let it steep for only about 15 seconds, as the leaf has already expanded and releases its ingredients more quickly. Serve promptly all round.

Benifuuki no. 1

This is my first order from keiko and I am overall quite satisfied by the products that I received I ordered Benifuuki (no1) and also Bancha Items arrived properly packed, along with all required instructions in English Taste-wise, I find Benifuuki very nice and always look forward to have it along with my breakfast. I would also be keen in having it in early evening, but due to moderate caffeine content, I decided not to - and this is why I also ordered the Bancha to try it out, but not really to my taste. So next time I try something else I also wish that the price was a bit lower, but in the end of the day you get what you pay for. Quality is very good, shipping/packaging also no problem, so I intend to buy again from Keiko in the future

"Warnung"

Springtime is Benifuuki time

It tastes good all year round - but especially in spring, when hay fever and allergies are in high season, Benifuuki is an insider tip!

Benifuuki No. 2 - Organic Japanese Green Tea
This Japanese green tea from the 2nd picking is very tenderly fermented. It is made from the tea variety "Benifuuki". This is characterized by a particularly high content of the special active ingredient epigallocatechin gallate 3 (EGCG 3), which reaches its peak similar to the caffeine content at the 2nd picking. The yellowish-green, clear cup has a slightly tart aroma with a floral note, which is particularly emphasized when the infusion time is shorter. The production and also the scent is similar to that of the Oolong tea. However, the freshly harvested leaves are not simply heated, but steamed for a short time while overheated. Benifuuki Matcha - Organic Japanese Tea Powder

Average rating of 4.73 out of 5 stars

Benifuuki Matcha - Organic Japanese Tea Powder
The tea cultivar Benifuuki is characterised by a particularly high content of catechins (EGCG and EGCG3) which are readily available to the body and for this reason it is often drunk in Japan for allergies such as hay fever. PreparationBenifuuki Powder can be whisked up with water using a Chasen, just like Matcha. The catechins give this golden green powder a strong and astringent aroma, which makes it very economical in use. Already half the usual (Matcha-)dosage results in a finely fragrant tea. Aficionados like to drink it pure. For those who find the taste too tart, we recommend a mild dosage, a combination with mild mulberry leaf powder or the use as a supplement in drinks and food. Prepared with a little water and lemon and/or apple juice, it is, for example, a wonderfully refreshing drink. Storage In order to preserve the precious flavours and ingredients of the powder in the best possible way, we recommend to seal the bag well and store it in a cool and dark place, ideally in your refridgerator or freezer.

Aki Benifuuki - Organic Japanese Green Tea

Aki Benifuuki - Organic Japanese Green Tea
This Japanese green tea from the autumn picking is very tenderly fermented. It is made from the tea variety "Benifuuki". It is characterised by a high content of the special active ingredient epigallocatechin gallate (EGCG 3). The caffeine content of the autumn picking is comparatively low so that the tea is also suitable for the afternoon. The yellowish, clear cup has a milder aroma than the first two pickings with a gentle citrus note. The bitter constituents contained in the cup only become clearly apparent in taste when prepared strongly and infused for a long time. Storage In order to preserve the precious flavours and ingredients of the tea as best as possible, we recommend to seal the bag well and store it cool and dark - ideally in your refrigerator or freezer.

Matcha Benifuuki Chai 50g Tuete

Average rating of 5 out of 5 stars

Matcha Benifuuki Chai - Organic Green Tea Powder with Chai spices for Benifuuki Chai Latte
Enjoy a delicious green tea latte – made with green tea powder from the Benifuuki variety, which is particularly rich in catechins, combined with aromatic chai spices and rounded off with naturally sweet mulberry leaves. Vegan, gluten-free, with no added sugar and surprisingly economical: one pack is enough for up to 50 servings. Benifuuki – the catechin Tea The Benifuuki cultivar is characterised by a particularly high content of readily absorbable catechins (EGCG and EGCG3) and, for this reason, is often drunk in Japan to help with allergies such as hay fever. Benifuuki powder has a very strong, tart flavour. If that’s too intense for you, this version might be just the thing, as the naturally sweet mulberry leaf powder wonderfully rounds off the flavour of the Benifuuki powder. Added to this is the spicy aroma of cinnamon, ginger, turmeric, cloves and pepper – which, in turn, complement the catechin tea perfectly with their respective ingredients. Preparation Matcha Benifuuki Chai can be prepared with frothed, hot milk (we recommend oat or rice-almond drink!) or added to smoothies and shakes. To avoid lumps, we recommend first mixing the powder with a little water to form a thick paste, and only then gradually adding the remaining liquid. Alternatively, heat and froth the milk and powder together in an electric milk frother. Tips for making matcha latte and other recipe ideas can be found here! We recommend one strong or two light servings a day. Storage To best preserve the powder’s valuable flavours and nutrients, please seal the bag tightly and store it in a cool, dark place.
