Benifuuki Powder - Organic Japanese Tea Powder
The tea cultivar Benifuuki is characterised by a particularly high content of catechins (EGCG and EGCG3) which are readily available to the body and for this reason it is often drunk in Japan for allergies such as hay fever. PreparationBenifuuki Powder can be whisked up with water using a Chasen, just like Matcha.The catechins give this golden green powder a strong and astringent aroma, which makes it very economical in use. Already half the usual (Matcha-)dosage results in a finely fragrant tea. Aficionados like to drink it pure. For those who find the taste too tart, we recommend a mild dosage, a combination with mild mulberry leaf powder or the use as a supplement in drinks and food. Prepared with a little water and lemon and/or apple juice, it is, for example, a wonderfully refreshing drink. Aracha Shincha 2025 - Organic Japanese Green Tea
Aracha Shincha brings the uniquely green, fresh Ooika flavour of the Aracha raw tea to Europe. With its wild, intensely green and grassy scent of freshly harvested tea fields, it conjures up the tea spring directly in our cups and is the closest to the original flavour of the tea plant.Special Features Shincha (the ‘new tea’) is made from the first tender leaves of spring - a vintage tea from the first early plucking in April, which surprises with its fresh flavour every year. Aracha is a partially processed green tea, which is reflected in its original, natural flavour. When tasting the raw teas directly after harvesting, they are brewed in particularly high doses and hot in order to savour the special characteristics of the tea. The higher infusion temperature (around 70°C) also brings out the flavour of this tea particularly well - let yourself be whisked away to the tea gardens of Kagoshima with the intense grassy aroma of freshly steamed tea leaves! cultivars:Yutaka Midori from the KEIKO organic farm in Kawanabe (Chiran) Asanoka from the Komaki brothers (Minami-Satsuma)Yabukita from the KEIKO organic farm in Kawanabe (Chiran)This year's Aracha is again composed of three cultivars, which are perfectly matched with their different flavours and aromas - grassy with a lively spiciness. Like many KEIKO teas, this tea is an intensively steamed tea (Fukamushi-cha, 100 - 120 seconds steaming time). The gentle steaming opens the leaf pores and the extracts are released from the tea leaf into the water more easily and quickly. This can be recognised by the deep green tea colour in the cup and the yield of the tea. Early harvests such as Aracha Shincha also have a particularly high theanine content, which is noticeable in the sweet flavour. Aracha is not yet ‘sorted’ as a raw tea - it therefore still contains some larger leaves as well as very fine bits of the leaves. PreparationTo emphasise the fresh fragrance, the infusion temperature can be set a little higher at 65-75°C.. Intensely steamed early harvests are particularly suitable for cold infusions (mizudashi). Even with cold water, Shincha Classic develops a particularly silky texture and a refreshing clarity after just a few minutes of infusion. The sweet theanine notes also come into their own particularly well, as the bitter substances do not dissolve as much in cold water. Storage Please note that Shincha Aracha is a raw tea and less dried than all other KEIKO teas. Aracha should therefore be enjoyed fresh and not stored for too long - we have set the best before date for this tea at 6 months from production here in Diepholz; we store it frozen! We therefore recommend closing the bag tightly and storing it in a cool, dark place in the fridge or freezer to preserve the tea's valuable flavours and ingredients as much as possible.

Ginger-Lemon-Bancha - Organic Japanese Green Tea
This large-leafed Bancha is fresh-fruity and spicy-aromatic in taste. Also, thanks to the low caffeine content of the autumn harvest, it is ideal for the whole family. Bancha is produced from the pruning after the main harvest, using mainly the larger leaves. For the Aki-Bancha used here, the unshaded leaves from the autumn harvest are used. Like simple Bancha, the ginger-lemon Bancha is often drunk with meals. Due to the strong aroma of lemon verbena and ginger, it is especially suitable for more hearty dishes. In summer, the tea also tastes very refreshing when cold. To enjoy as iced tea pour the tea hot and let it cool down. Shincha Yume 2025 - Organic Japanese Green Tea
A harmonious, multi-layered tea with a velvet-like soft texture, that develops into a fruity sweetness on the tongue. This year, we have once again refined the dream flavour of the Yume Kaori cultivar with the sweet note of the Sae Midori cultivar. Special features Shincha - the ‘new tea’ heralds the start of the tea year every spring. The first tea from the fine, particularly aromatic leaf tips, which are harvested in the subtropical climate of Kagoshima as early as mid-April. In order to capture the fresh flavour in the best possible way, shincha is dried a little lighter than usual for sencha in the final processing stage, giving the teas a special freshness that seems particularly pronounced in Shincha Yume. Cultivars: 70% Yume Kaori from the KEIKO organic farm in Kawanabe (Chiran) 30% Sae Midori from the Komaki brothers (Minami-Satsuma) Kabusecha is a green tea produced by shading the tea plants for a period of 7-10 days before harvesting, which results in a high content of chlorophyll and other active ingredients and a low level of bitterness. Their characteristic ‘shade flavour’ is called ‘ooika’. Early harvests such as Shincha Yume also have a particularly high theanine content, which is noticeable in the sweet flavour. Preparation We recommend an infusion temperature of around 60°C for a particularly round, flowery flavour. Leave the first infusion to infuse for about 1 minute. A few seconds are then enough to extract the flavour from the leaves. For the last infusion, you can increase the infusion time again to tease out all the flavour. If the tea still turns out stronger than desired, the flavour intensity can be slightly adjusted by adding a little more water. Deep steamed early harvests are particularly suitable for cold infusions (mizudashi). Even with cold water, Shincha Yume develops a particularly silky texture and a refreshing clarity of flavour after just 5 minutes of infusion. Aki-Bancha - Organic Japanese Green Tea
Bancha is produced from the pruning after the main harvest, using mainly the larger leaves. For the Aki-Bancha, the unshaded leaves from the pruning of the autumn harvest are used. Aki Bancha is light green in the cup and has a finely tart, refreshing aroma. Because of the low caffeine content of the autumn harvest, the autumn Bancha is also suitable for consumption in the early evening. In Japan, Bancha is often served in restaurants for dinner. Gyokuro Kiwami - Organic Japanese Green Tea
Enjoy a harmonious aroma with the fine sweetness typical of Gyokuro, paired with a refreshing fruity spice and a long, full-bodied aftertaste. For the first time we can now offer a premium Gyokuro from the highlands of Kagoshima. The tea bushes are only harvested once a year. In two stages, the tea plants are shaded for a total of 3 weeks and slightly steamed for about 40 seconds (Futsuumushi). The infusion of the small dark green needle-shaped leaves presents itself in the cup with a green that is unusually intense for Gyokuro, especially in the second infusion, and a fresh, invigorating fragrance. We recommend three infusions at 50-60°C for this tea, the fruity aromas are particularly effective in cold infusion. Fully shaded teas from organic cultivation are particularly rare, as the tea plants are also particularly prone to parasites in the strong shade and special diligence and experience are required for cultivation. However, the effort is rewarded with a very special, multifaceted density of aromas. Bancha - Organic Japanese Green Tea
Kabuse Bancha is a green tea speciality made from the pruning of the tea plants after the main harvest, usually after the last harvest in summer or autumn. However, KEIKO Bancha is harvested in spring and processed as carefully as only Sencha or Kabusecha is usually processed. In spring, the leaves contain particularly high levels of theanine, which gives this unusual Bancha a particularly mild, harmonious aroma. It is light green in the cup and an ideal family and beginners green tea. In Japan Bancha is often served in restaurants. Kabusecha Kabusecha is a green tea for which the tea plants are shaded, thus forming a high content of chlorophyll and other active ingredients and at the same time little bitter substances. Their characteristic "shade aroma" is called "ooika". A pinch of matcha gives this semi-shade green tea from the April picking a bright deep green colour, especially in the first infusion, which then clears up slightly. The pleasing, fresh green flavour makes the tea a wonderful everyday companion and is also a good starter tea for green tea novices.In Japanese, this combination of Sencha with Matcha powder is also known as Matchairi Sencha.Kabusecha is a green tea that is produced by shading the tea plants, which causes them to develop a high content of chlorophyll and other active ingredients such as theanine, which is noticeable in the sweet flavour. At the same time, the plants produce fewer bitter substances due to the shade.Like many KEIKO teas, this tea is an intensively steamed tea (Fukamushicha). Shincha Sae Midori 2025 - Organic Japanese Green Tea
New in the KEIKO Shincha family: a sweet and aromatic Asamushi tea made from 100% Sae Midori with a silky-smooth sweetness, a full-bodied flavour with a long finish that is somewhat reminiscent of Gyokuro. Cultivation and processing Shincha - the ‘new tea’ heralds the start of the tea year every spring. The first tea from the fine, particularly aromatic leaf tips, which are harvested in the subtropical climate of Kagoshima as early as mid-April. Kabusecha is a green tea that is produced by shading the tea plants for 7-10 days before harvesting, which results in a high content of chlorophyll and other active ingredients and a low level of bitter substances. Difference Between Green Tea and Black Tea

The main difference between green and black tea lies in the processing. Since green tea is not oxidized, the green colour of the leaves is preserved, and the tea retains its fresh, grassy flavors. Black tea, on the other hand, undergoes an oxidation process, which gives it its dark color and robust, malty taste. The fermentation also reduces the amount of theanine and other nutrients present in the leaves. Both teas, however, originate from the same plant – Camellia sinensis.

Prepare one cup per person with a capacity of 80 to 100 ml. Pour freshly boiled water into a cooling vessel or directly into the cups to preheat them and lower the water temperature to the ideal range of 60°C to 80°C. This helps preserve the full aroma of the tea leaves.

Use one level teaspoon of tea per person and place it into a teapot. Pour the water over the tea leaves and let the first infusion steep for only 30 to 60 seconds (or as indicated on the packaging) to achieve a balanced strength and gentle aroma.

If preparing tea for multiple people, start by pouring a small amount of tea into each cup. Then, fill the cups in reverse order to ensure the tea has a consistent strength in all cups. Be sure to pour out the last "golden" drops to guarantee the full flavor.

Serve the tea fresh and unsweetened, optionally accompanied by a small traditional Japanese sweet. The tea leaves can be used for multiple infusions – the steeping time will only take a few seconds, as the leaves have already expanded.

Cold Brew Green Tea – Mizudashi

For a refreshing summer treat, we recommend the cold brew method, also known as Mizudashi (水出し). In this method, green tea is infused directly with cold water, which releases fewer tannins and caffeine, but highlights the sweet flavor of L-theanine.

  • Place a thin layer of tea leaves in your teapot. 
  • Fill the pot with cold water and let it steep for 2 hours (place it in the refrigerator for extra refreshment). 
  • Simply pour the tea directly from the pot after steeping (thanks to the integrated filter of Kyusu teapots, the leaves will stay in the pot and the tea can be directly served).

The cold brew retains its vibrant green colour and stays fresh for hours in the refrigerator. Perfect for hot summer days!
