Difference Between Green Tea and Black Tea

The main difference between green and black tea lies in the processing. Since green tea is not oxidized, the green colour of the leaves is preserved, and the tea retains its fresh, grassy flavors. Black tea, on the other hand, undergoes an oxidation process, which gives it its dark color and robust, malty taste. The fermentation also reduces the amount of theanine and other nutrients present in the leaves. Both teas, however, originate from the same plant – Camellia sinensis.

Prepare one cup per person with a capacity of 80 to 100 ml. Pour freshly boiled water into a cooling vessel or directly into the cups to preheat them and lower the water temperature to the ideal range of 60°C to 80°C. This helps preserve the full aroma of the tea leaves.

Use one level teaspoon of tea per person and place it into a teapot. Pour the water over the tea leaves and let the first infusion steep for only 30 to 60 seconds (or as indicated on the packaging) to achieve a balanced strength and gentle aroma.

If preparing tea for multiple people, start by pouring a small amount of tea into each cup. Then, fill the cups in reverse order to ensure the tea has a consistent strength in all cups. Be sure to pour out the last "golden" drops to guarantee the full flavor.

Serve the tea fresh and unsweetened, optionally accompanied by a small traditional Japanese sweet. The tea leaves can be used for multiple infusions – the steeping time will only take a few seconds, as the leaves have already expanded.

Cold Brew Green Tea – Mizudashi

For a refreshing summer treat, we recommend the cold brew method, also known as Mizudashi (水出し). In this method, green tea is infused directly with cold water, which releases fewer tannins and caffeine, but highlights the sweet flavor of L-theanine.

  • Place a thin layer of tea leaves in your teapot. 
  • Fill the pot with cold water and let it steep for 2 hours (place it in the refrigerator for extra refreshment). 
  • Simply pour the tea directly from the pot after steeping (thanks to the integrated filter of Kyusu teapots, the leaves will stay in the pot and the tea can be directly served).

The cold brew retains its vibrant green colour and stays fresh for hours in the refrigerator. Perfect for hot summer days!
