Organic Mulberry Leaf Tea Shimane

This mulberry leaf tea with a fine, toasty caramel flavour is produced in Shimane Prefecture. The leaves are hand-picked in Shimane and lightly fired. This gives them a fine, warm flavour and a pleasant sweetness. In the cup, the infusion has a golden colour reminiscent of honey and amber. Depending on how it is prepared, the tea develops nuances of black tea, barley, popped amaranth or hojicha. A wealth of surprising flavours that invites you on a taste journey to the mist-shrouded mountains of Shimane. Background The leaves of mulberry trees are essential in silk production as they are the only source of food for silkworms. They were therefore also cultivated for silk production in Japan for a long time. Due to the advance of artificial fibres, many of the cultivation areas are now fallow. The realisation that mulberry leaves can also be very tasty and nutritious for us humans if processed correctly therefore came just in time to breathe new life into the mulberry groves. KEIKO Maulbeerblätter-Tee Set

Zwei Varianten des Maulbeerblätter-Tees im Probier-Paket zum Vorteilspreis.Das Set enthält Maulbeerblättertee Kagoshima und Maulbeerblättertee Shimane zu je 50g.Schon das trockene Blatt und die Aufgussfarbe der beiden Sorten lassen die Unterschiede erahnen: In Kagoshima werden die Maulbeerblätter auf ehemals für die Teeproduktion verwendeten Geräten verarbeitet. Blätter und Aufguss erhält so eine dezente Süße und ein wohltuendes Aroma, das uns an frühsommerliche satte Wiesen, Weizengras und Brennnessel oder Hanf erinnert. In der Tasse hat der Aufguss eine olivgrüne Farbe.In Shimane werden die Blätter von Handgepflückt und anschließend etwas stärker getrocknet Das Blattgut enthält dadurch neben grünen auch etwas bräunliche Blatt- und Stängelteile und erzeugt im Aufguss eine bernsteinfarbene Tassenfarbe und herrlichem fein-toastigem Karamellaroma hergestellt. In der Tasse hat der Aufguss eine goldene Farbe, die an Honig und Bernstein erinnert.Je nach Zubereitung entwickelt der Maulbeerblättertee aus Shimane Nuancen von schwarzem Tee, Gerste, gepopptem Amaranth oder Hojicha. Eine Fülle von überraschenden Aromen, die zu einer Geschmacksreise in die nebelumwobenen Berge von Shimane einlädt.HintergrundDie Blätter der Maulbeerbäume dienen als Nahrungsquelle für Seidenraupen und wurden daher für die Seidenproduktion lange Zeit auch in Japan kultiviert. Mulberry Leaf Powder - Organic

The mild and sweet aroma of mulberry leaves has a relaxing and soothing effect. The color, especially in powder form, is similar to matcha tea with its fresh light green hue. In terms of taste, the powder is reminiscent of a mild matcha with the slightly nutty note of nettle tea. It is not for nothing that the powder of ground mulberry leaves is popularly used in Japan for caffeine-free "matcha lattes". This may be attributed to the fact that the mulberry leaves are steamed and processed just as gently as Japanese green tea, which also preserves the sensitive ingredients in the best possible way. Whipped up like matcha or matcha latte, it is an ideal caffeine-free and milder alternative or can be used as a complement to matcha for the evening. Mulberry leaves do particularly well as a balancing component in more tart teas such as Benifuuki powder - here the sweet aroma creates a pleasant balance. With its wealth of active ingredients the powder also makes for a valuable addition to green smoothies.

Japanese Black Tea Yakushima - Organic

A honey-golden cup colour and a flowery rounded aroma characterise this black tea from the name-giving island Yakushima, a dreamlike natural idyll of the Kagoshima Prefecture about 60 km south of the main island Kyushu. Amidst the lush forests of a nature reserve, which has been declared a World Heritage Site by UNESCO, the tea grows here in small tea gardens, which are cultivated by the Fujiwara family according to EC organic guidelines. In contrast to conventional black tea, the fermentation time for this Japanese black tea is somewhat shorter and varieties are used that are traditionally used mainly for green tea.

Japanese Black Tea Kawanabe - Organic

This exceptional black tea is obtained from the Benifuuki variety and derives its name from the Kawanabe (Chiran) region in Kagoshima, where Shimodozono Biofarm is located. The variety gives the tea a fragrance reminiscent of vineyard peach and jasmine, while the tart flavours that characterize this variety as a green tea fade into the background due to fermentation. Unlike regular black tea, the fermentation time for this Japanese black tea is somewhat shorter. It enchants with a fine-scented, amber-coloured cup and striking, elegant taste.

Japan Oolong Karasu - Bio

The KEIKO Special Tea segment represents our "non-green" teas. Rarities that are difficult to find but have convinced that they deserve their spot on tea shelves everywhere. The KEIKO Japan Oolong Karasu is the newest addition to this range. Oolong tea is "half-fermented", which means it can be placed in between the very lightly fermented KEIKO Benifuuki teas and the Japanese Black Teas Kawanabe and Yakushima.Oolong originated in China and is translated as the "black dragon". The Japanese signs used for Oolong tea differ slightly and are a combination of the signs for crow, dragon and tea. The sign for crow on its own is read "Karasu" - giving a name to our tea.Like the Japanese Black Tea Yakushima the KEIKO-Oolong is grown in the organic tea garden of the Fujiwara family on the beautiful island of Yakushima - a lush, subtropical paradise that has been declared UNESCO world natural site. It is made from the first spring harvest of the undshaded tea plants of our signature cultivar Yutaka Midori.Aroma:Oolong Karasu has a particularly soft, velvety aroma with a honey-like sweetness, subtle vanilla notes and the delicate fruity taste of ripe peaches.Preparation:Oolong is traditionally "washed" with the first infusion by pouring hot water over it and draining it directly. You can omit this step with this oolong and let the first infusion steep at about 90°C for about 1 minute - this allows you to enjoy the full range of flavor of the tea.The tea has a clear orange-golden color in the infusion and has a very high yieald. It can be re-infused several times with a few seconds of infusion time, the infusion time can then be extended again slightly for the last infusion. Storage: We recommend to store the opened packade in a cool and dry space.
