Kabuse Matcha - the all-rounder!

Kabuse powder comes from Kabusecha tea plants which, instead of being 90% shaded like Tencha, are only about 50% shaded - that is, they grow in partial shade.
It is available in different quality grades depending on the picking times. While teas from the pre-picking or the first main picking have an intense but refined aroma, tea from the second picking has a higher tannin content and thus a stronger, more astringent one. Therefore, tea powder from the 2nd picking is particularly suitable as an energizing ingredient in further processing, e.g. for sweet drink recipes, for fine dessert cuisine and also for cosmetic skin care.

However, the Kabuse powders can also be whisked up pure with water like a Matcha. Especially the Soshun powder from the early harvest develops a rich, pleasantly fine-tart aroma.
