KEIKO Mulberry Leaf Tea Set
Two variants of mulberry leaf tea in a sample pack at a special price.
The set contains 50g each of Kagoshima mulberry leaf tea and Shimane mulberry leaf tea.
The dry leaves and the color of the infusion of the two varieties already give an idea of the differences:
In Kagoshima, the mulberry leaves are processed using equipment that was formerly used for tea production. This gives the leaves and infusion a subtle sweetness and a soothing aroma reminiscent of lush early summer meadows, wheatgrass, nettles, and hemp.
The infusion has an olive green color in the cup.
In Shimane, the leaves are picked by hand and then dried a little more thoroughly. As a result, the leaves contain not only green but also slightly brownish leaf and stem parts, producing an amber-colored infusion with a wonderful, delicately toasty caramel aroma. In the cup, the infusion has a golden color reminiscent of honey and amber.
Depending on how it is prepared, mulberry leaf tea from Shimane develops nuances of black tea, barley, popped amaranth, or hojicha.

Background
The leaves of mulberry trees serve as a food source for silkworms and were therefore cultivated in Japan for a long time for silk production. Due to the advance of artificial fibers, many of the cultivation areas are now lying fallow.
The realization that mulberry leaves, when processed correctly, can also be very tasty and nutritious for us humans came just at the right time to breathe new life into the mulberry groves.
Green tea preparation
Prepare
Provide one cup with a capacity of 80 to 100 ml per person. Depending on the variety, let the boiled water cool down to 80° to 60°C. To do so, pour the water into a cooling bowl or directly into the cups to cool, which also pre-warms them.
Dose
Add one level teaspoon of tea per person into a clay teapot. Pour one cup of water per person over the leaves. Let the first infusion steep for a maximum of 30 to 60 seconds.
Pour
If the tea is served to several people, first pour only a little tea into each cup and then top them up in reverse order. This way the tea is equally strong in all cups. The pouring motion gradually gives the tea its proper green colour. Also pour out the last “golden” drops to prevent the tea from over-steeping.
Enjoy
Serve the tea fresh. In Japan, a small sweet is often served with the unsweetened tea. For further infusions, pour water over the tea leaves again. Let it steep for only about 15 seconds, as the leaf has already expanded and releases its ingredients more quickly. Serve promptly all round.

Ik dronk eerst vooral gyokuro. Tot ik dese shincha's ontdekte. Zeer zoet en licht. Top.

Heerlijke thee!
Ik dronk deze 2 theeën voor het eerst. Lekker zoet én een beetje kruidig tegelijkertijd. Ik ga ze zeker nog eens kopen en ook de mulberry pulver proberen.
