Cold infusions

A powdered tea from the 1st picking in May. Very aromatic with a noble bitter note. Recommended for light Matcha (Usucha) and ideal for mixed drinks and green tea cocktails.

Kabuse Powder

Kabuse Powder, unlike Matcha, is not extracted from Tencha but from the whole tea leaf. Also, the tea plants for Kabuse powder are shaded by 50% instead of 90% and thus grow in half shade. By grinding from the whole leaf, the Kabuse powder contains more tannins than Matcha and has a stronger taste. The strong green color and its stronger aroma bring out the full green tea taste. Whether in cocktails, ice cream or milkshakes, Kabuse powder is an all-rounder.

Storage

In order to preserve the precious flavours and ingredients of the powder in the best possible way, we recommend to seal the bag well and store it in a cool and dark place, ideally in your refridgerator or freezer.

Schmeckt wie milder Matcha

Habe das Teepulver für meine Schwester gekauft. Wir dachten erst, das es milder Matcha sei. Aber es hat ihr so gut geschmeckt, dass sie es nochmal wollte.

The handcrafted bamboo Matcha whisks are essential for creating the fine foam-top on your Matcha and making sure the powder dissolves without leaving lumps or a grainy texture. The finer the prongs of the whisk (indicated by a larger size) the better the results. For the easy preparation at home we recommend to first add only a small amount of water to the Matcha Powder and use the whisk to blend it to a smooth paste. Then add the rest of the water and whisk it up painting an M with the whisk with quick movements from the wrist. Matcha whisks are made from bamboo-sticks that are cut into fine prongs at the top and then bent into shape. Kabuse No. 1 - Organic Japanese Green Tea
Half shaded teas from the first picking like the Kabuse No. 1 have an aromatic touch of sweetness due to an increased theanine content, paired with a fine bitterness and fresh green. For this shaded Sencha from the first main picking, the first leaves sprouting from the tea bush are harvested. Kabusecha Kabusecha is a green tea for which the tea plants are shaded, thus forming a high content of chlorophyll and other active ingredients and at the same time little bitter substances. Their characteristic "shade aroma" is called "ooika".   Fukamushicha   Like many KEIKO teas, this is an intensively steamed tea (Fukamushi-cha, 100 - 120 seconds steaming time). Due to the gentle steaming process, the leaf pores open and the extracts from the tea leaf reach the water more easily and quickly. This can be recognized by the deep green tea colour in the cup and the yield of the tea - with top qualities up to 4 infusions are possible! Cold Brew       Intensively steamed early pickings are also particularly suitable for cold infusions (Mizudashi or Cold Brew). By infusing the leaves with cold water you will get an intensive and refreshing tea after only a few minutes. Since the bitter substances do not dissolve as strongly in cold water, the sweet aromas of the Kabusecha are especially noticeable.
