Makes 12 muffins


280 g flour

125g sugar

15g baking powder

1 heaped tablespoon hojicha powder

pinch of salt

100ml oil (e.g. rapeseed oil)

150ml mineral water

1 large apple

1 handful of nuts (e.g. walnuts), chopped


1. dice the apple and sauté half of it in a top until the pieces are soft and mash or puree.

2. preheat the oven to 180°C and grease the muffin tins or fill them with muffin cups.

3. mix all dry ingredients in a large bowl.

4. in another bowl, mix mineral water and oil and stir directly into the batter.

5. stir apple (pulp and pieces) and nuts into the batter.

6. fill the muffin cups with the mixture up to the rim.

7. bake for 20-25 minutes in a preheated oven at 180°C.
