 Ideal for preparing cold infusions of green tea - for a rich but mild aroma. 

 Practical: When brewed cold, the sweetness of the L-theanine in the green tea comes into its own, while the bitter substances remain in the background even with a long brewing time. You can therefore simply store your Mizudashi green tea in the fridge - it will stay fresh, green and mildly aromatic for hours! 

 Depending on the type of tea, a few minutes are sufficient for infusion, for example KEIKO Shincha Yume (Fukamushi). For less steamed teas or herbal infusions, a longer infusion time of several hours is recommended.

 The Filter-In Bottle is manufactured by Hario in Japan. Thanks to the heat-resistant glass, the bottle is also suitable for hot infusions - make sure that only as much water is poured in as is needed so that the tea does not continue to steep in the bottle. 

 Do not shake the bottle during preparation, only turn or swirl it, otherwise the tea leaves may slip past the integrated sieve. 

 Tip: Serve cold-brewed green tea from the bottle with food in wine glasses as an alternative to wine.

Gyokuro Tonbo - Organic Japanese Green Tea
Tonbo = Japanese for "dragonfly"Thanks to slightly more intensive steaming and drying, this gyokuro is particularly rich in extracts. This is reflected in a beautiful green colour in the cup and a spicy, warm aroma, making the tea a wonderfully full-bodied treat.  The tea from the Sae Midori cultivar is grown in the highlands of Kagoshima, and the tea bushes are harvested only once a year at the end of April. In two stages, the tea plants are shaded for a total of three weeks before harvesting and only lightly steamed (Asamushi).  Gyokuro  Organically grown gyokuro is a rarity, as the tea plants are particularly susceptible to pests due to the heavy shading. Extreme care and a great deal of experience are therefore essential for cultivation. However, the effort is rewarded with a very distinctive, complex aroma. Gyokuro is often described as the master class of Japanese green tea cultivation. Preparation The classic method: Gyokuro is traditionally prepared very intensively with 6-7g of tea leaves per 100ml, water heated to 40-55°C and a steeping time of approx. 2 minutes. This produces a tea with an incredibly dense, full-bodied aroma and a very pronounced sweetness. Our recommendation: For a full but slightly lighter aroma, use 3-4g of tea leaves (a heaped teaspoon) per 100ml, water at 55-60°C and a steeping time of approx. 1.5 minutes. The second infusion then only steeps for approx. 30 to 45 seconds at 60°C. Shincha Yume 2025 - Organic Japanese Green Tea
A harmonious, multi-layered tea with a velvet-like soft texture, that develops into a fruity sweetness on the tongue. Enjoy thedream flavour of the Yume Kaori cultivar of this single origin, single cultivar Shincha! Special features Shincha - the ‘new tea’ heralds the start of the tea year every spring. The first tea from the fine, particularly aromatic leaf tips, which are harvested in the subtropical climate of Kagoshima as early as mid-April. In order to capture the fresh flavour in the best possible way, shincha is dried a little lighter than usual for sencha in the final processing stage, giving the teas a special freshness that seems particularly pronounced in Shincha Yume. Cultivars: 100% Yume Kaori from the KEIKO organic farm in Kawanabe (Chiran)Kabusecha is a green tea produced by shading the tea plants for a period of 7-10 days before harvesting, which results in a high content of chlorophyll and other active ingredients and a low level of bitterness. Sae Tezumi 2024 - Organic Japanese Green Tea
Sae Tezumi is made from the award winning cultivar Sae Midori using only the best leaves carefully selected and picked by hand. The result is a wonderfully clear, lively tea with a fresh sweetness, a light green cup and a slight aroma of fresh pine needles in spring. The harvest by hand also entails a smaller harvest amount - so get your share now, stocks are limited! Preparation For the hot infusion of Sae Tezumi , we recommend an infusion temperature of 65°C and a brewing time of 70 seconds for the first infusion. For the second infusion, a shorter infusion time of about 30 seconds is sufficient, you can then let the last infusion steep a little longer again (70 sec) to bring out the full flavor. Aracha Shincha 2025 - Organic Japanese Green Tea
Aracha Shincha brings the uniquely green, fresh Ooika flavour of the Aracha raw tea to Europe. With its wild, intensely green and grassy scent of freshly harvested tea fields, it conjures up the tea spring directly in our cups and is the closest to the original flavour of the tea plant.Special Features Shincha (the ‘new tea’) is made from the first tender leaves of spring - a vintage tea from the first early plucking in April, which surprises with its fresh flavour every year. Aracha is a partially processed green tea, which is reflected in its original, natural flavour. When tasting the raw teas directly after harvesting, they are brewed in particularly high doses and hot in order to savour the special characteristics of the tea. The higher infusion temperature (around 70°C) also brings out the flavour of this tea particularly well - let yourself be whisked away to the tea gardens of Kagoshima with the intense grassy aroma of freshly steamed tea leaves! Aracha is not yet ‘sorted’ as a raw tea - it therefore still contains some larger leaves as well as very fine bits of the leaves. The Yutaka Midori cultivar gives the Shincha Classic its familiar fresh green aroma and rich colour. This year we combined it with the recently developed cultivar Sae Akari. Benifuuki Powder - Organic Japanese Tea Powder
The tea cultivar Benifuuki is characterised by a particularly high content of catechins (EGCG and EGCG3) which are readily available to the body and for this reason it is often drunk in Japan for allergies such as hay fever. This fine Sencha from the April picking convinces with incomparably elegant aromas and a well-balanced, velvety-soft taste.<h3>The Kimura Method</h3>This organic cultivation method is named after Akinori Kimura, who originally used it to grow apples. The method aims to increase the quality of the fruit by deliberately avoiding any fertilization, thus stimulating root activity.For the first time, this natural cultivation method was also applied to tea plants at KEIKO Biofarm. Zairai tea plants, which are grown from seed, were used for this purpose.The harvest quantities are very small - an absolute rarity!<h3>Preparation</h3>For the hot infusion of Kimura Sencha, we recommend an infusion temperature of 65°C and a brewing time of about 70 seconds for the first infusion. For the second infusion, a shorter infusion time of about 30 seconds is sufficient. The last infusion can then be left to infuse a little longer (70 sec.) to bring out the full aroma.In the cold infusion, the tea unfolds previously unknown, delicate aromas and a slight sweetness. Hojicha (or: Houjicha) is a roasted green tea. The name is composed of the word 'hojiru' for 'toast' and the 'cha' for 'tea'. Item No. 42200 The Ooika- Cold brewer for the preparation of drip tea can be used with hot OR cold water. However, it is ideal especially for cold brew green tea highlighting the rich yet sweet green fragrance of high quality Kabusecha, known amongst tea-connoisseurs as Ooika. The Cold brewer consists of two glass vessels which are connected with a rubber base with a small opening, which lets the water drip into the stainless steel strainer underneath and then into the lower vessel. To prepare your cold drip Green Tea measure 2-3 teaspoons of tea into the sieve (make sure the tea covers the bottom of the strainer evenly) and fill the upper vessel with 600 to 900ml of water. You can also use ice cubes to make a Kouridashi-brew, either letting them melt slowly to drip over the tea or just add them to your tea once its ready. The preparation takes between 25 and 45 minutes. You can adjust the speed by pushing the little knob deeper into the rubber base to slow the water flow or pulling it back out to speed it up. Best suited for this type of preparation is deep steamed (fukamushi) Kabusecha from an early picking, as these will best release the aroma and all the valuable ingredients of the tea but also the least astringency.
