To conjure up the fine foam crown on the Matcha, a Matcha broom is indispensable. With the fine ribs, the powder can be whipped particularly well - without lumps and with a delicate crema.
This is the classic matcha broom (chasen) in size 80.
In these matcha whisks, the inner part is already untwisted and no longer has the pretty little "donut-bun" that usually adorns a new matcha whisk - but this comes off after the first few uses with every matcha whisk. The detangled middle section therefore does not impair use.
For easy Matcha preparation at home, we recommend mixing the powder with a few drops of water to a thick paste and then adding the remaining water and whisking with the broom. Do not stir in a circle, but use the whisk to draw an 'M' in the matcha with quick movements from the wrist. After only a few seconds, a foam crown will form.
The matcha whisks are made by hand from bamboo. For this purpose, the bamboo stick is cut at the upper end, so that fine tines are created, which are then bent into shape. The thicker the bamboo, the more tines can be formed. This is how the different sizes (80, 100, 120) are created.
When whipping, you will find that an usucha in particular is easier to whip with the larger brooms and the foam is finer.
For smaller matcha bowls, in turn, particularly narrow brooms are suitable.
In order to enjoy your matcha whisk for a long time, we recommend placing the whisk in a bowl of water for a short time before preparing the tea, so that the bamboo becomes soft and flexible. The finely tangled curved tines of the broom will gradually relax after initial use and the bamboo will gradually mold back into its natural straight shape. To counteract this and keep the shape of the match broom as long as possible, it is worthwhile to store it on a match broom stand (kusenaoshi).
Even though size specifications traditionally refer to the number of tines, it is not so much the actual number of tines as the combination of the diameter of the bamboo and the fineness of the tines that is relevant for the size designation.
